I hadn't been to Socorro's, near Espanola, NM, in about 2 years. Last month I was able to stop by and have another great breakfast of Huevos Rancheros. For the uninitiated, this dish consists of corn tortillas laid flat, with pinto beans, fried potatoes, cheese, onions, smothered in chile sauce, with two fried eggs on top. This day I opted for the red chile sauce (as opposed to green). Ever so delightful! Accompanying the meal was a pair of flour tortillas, and some fresh coffee for good measure.
Sidenote: Socorro's is actually in Hernandez, NM, which has as its claim to fame the "Moonrise over Hernandez" photograph by Ansel Adams. The site where the photograph was taken is not far from the restaurant.
My daughter ordered the breakfast burrito, smothered in red chile sauce (by her choosing). A meal fit for a queen (or king, for that matter).
